I have looked into portable solar chargers such as the solio ones
but i dont know what is the best device to use as a charger, whether it be an external battery, a hand crank charger( i dont know if those even exist for the ipod touch), or a solar charger with an external battery

My answer is an external battery pack. I have one that takes four AA batteries. Make sure that these are Li-Ion rechargables, to help perserve the environment.
The one that I have can charge my iPod fully within two hours, and can do this twice on one full set of batteries. Not a 100% renewable power source, but the rechargable batteries come close ^^
use an ihome or something similar
